Kale pie

with onion, pepper, garlic and a topping of cream
The homemade whole-wheat dough with seeds is filled with sautéed vegetables and has a delicious flavour of the kale combined with cheese.

Flour mix

Sunflower oil

Kale

Onion

Red pepper

Garlic

Goat cheese

Soy cream

Egg

Mix of green leaves

Oriental salad dressing

Cucumber

Carrot

Ground nutmeg

Instructions
1.
Preheat the oven to 180 degrees.
2.
For the dough: place the flour mix in a bowl and mix it well. Add the sunflower oil, 150ml of water and salt to taste. Mix everything while avoiding to knead, so it doesn't become too elastic. Once everything is mixed, cover the dough and let it rest for 5 minutes. Place the dough ball in the centre of a cake mould (20-24cm diameter) and stretch it with your fingertips until the entire mould is covered. The dough shouldn't be thicker than 1/2cm. Remove any excess dough with a knife. Prick the entire base and edges of the dough with a fork. Bake in the oven for 10-12 minutes until the dough is cooked, but without changing colour. It should be firm when you press it with your finger. Keep the oven on.

Wash the vegetables. Finely chop the kale. Peel the onion and garlic, and chop it together with the pepper. Grate the cheese. Heat 2 tablespoons of oil in a frying pan and sauté the garlic, onion and pepper with a pinch of salt for 4 minutes until they're very tender. Add the kale and cook it for another minute. Remove from the heat, season to taste and add the nutmeg. Set aside. Beat the eggs with the cream in a bowl until they're well-mixed. Season to taste.

Fill the dough with the kale, press it to spread it over the entire inside of the mould. Cover it with the egg and cream mixture and finish by sprinkling it with the cheese. Bake in the oven for 15 minutes until the surface coagulates.

For the salad: chop the green leaves, peel and grate the carrot, and cut the cucumber into slices. Mix everything together with the oriental dressing. Serve the pie with the salad on the side.
