Red quinoa pizza burger

with red beans and served with roasted potatoes
This recipe is absolutely nutritious through the combination of cereals and legumes used for the burger base and is finished with tomato sauce, basil and mozzarella cheese. The potatoes are first boiled and then roasted, which makes them both creamy on the inside and crispy on the outside.

Red quinoa

Cooked red beans

Garlic

Burger seasoning

Tomato paste

Fresh basil

Fried tomato sauce

Mallorcan potatoes

Mozzarella

Instructions
1.
Preheat the oven to 200 degrees.
2.
Wash the potatoes. Place them in a pot and cover them with water. Once the water starts boiling, cook the potatoes for 5 minutes and drain the water. Place them in a bowl and add 2 tablespoons of oil. Season to taste. Mix it well and place them on a baking tray. Bake in the oven for approx. 10-15 minutes until they're golden brown.

Cook the quinoa for 10 minutes in plenty of boiling water. Drain the water and let it cool down.

Drain and wash the beans. Finely chop 1/2 garlic. Place the quinoa, beans, tomato paste, minced garlic and the burger seasoning in a bowl. Mash the ingredients with a potato masher until they're well mixed. Divide the mixture into 6 portions and form patties of them with your hands.

Mince 1 garlic clove and roughly chop the basil. Heat the fried tomato sauce and add the garlic and basil. Let it cook for 2 minutes and set aside.
6.
Place the patties on a baking tray with parchment paper and bake them in the oven for 5 minutes. Turn them around and cover them with the tomato sauce and grated cheese. Bake them for another 5-7 minutes.
7.
Serve the burgers with the Mallorcan potatoes and remaining tomato sauce.
