Spaghetti with a creamy broccoli sauce

This quick and easy pasta recipe combines the creaminess of the broccoli, garlic and onion sauce with the savoury flavours of fresh goat cheese and walnuts.

Spaghetti

Broccoli

Onion

Garlic

Fresh thyme

Almond milk

Goat cheese

Walnuts

Pasta seasoning

Instructions
1.
Boil plenty of water (approx. 3 litres) in a medium-size sauce pan and optionally add salt.
2.
Wash all the vegetables. Cut the broccoli florets into small and equal pieces and add it to the pot once the water boils. Let it cook for 3 minutes. Remove the broccoli with a skimming spoon and let it cool down. Keep the sauce pan on the fire to cook the pasta later.

Peel and finely chop the onion and garlic. Take the thyme leaves off the branches. Heat 3 tablespoons of olive oil in a frying pan and sauté the onion, garlic, thyme and broccoli for 4 minutes. Add the milk and the pasta seasoning and bring it to a boil. Once it starts to boil, lower the heat to a minimum and remove half of the broccoli mixture. Blend it with a hand blender to a smooth cream. Put the cream back in the pot with the rest of the broccoli and let it simmer. Make sure it doesn't dry out! Add salt to taste.

Cook the spaghetti for approximately 8 minutes in the boiling water. Drain the water and reserve 1/2 cup of the cooking water.
5.
Grate the cheese and chop the walnuts.
6.
Once the pasta is cooked, add the sauce and 1/2 cup of the cooking water. Stir for 1 minute over medium heat and add half of the grated cheese. Serve the pasta on a paste plate and sprinkle it with the remaining cheese and walnuts.
